[Teachldsseminary] OT: French Toast Souffle

I'm sure this isn't the same recipe, but I have made this twice for my 
Seminary students this year, and it has been a HUGE hit!  I got this recipe 
from a B&B in Palmyra, so we call it Emma's Blueberry Breakfast.  I do have 
other Egg Souffle recipes as well, with sausage, ham or hash browns so if 
you want others let me know and I'll try to find time to type them in this 
week.

Emma's Blueberry Breakfast

One loaf French Bread, broken into bite-size pieces
12 oz cream cheese (cold)
2 cups frozen blueberries
8 eggs
2 1/2 cups half and half (I just use part milk and part cream to make my 
own)
6 T butter, melted
1/4 maple syrup

Spray baking dish with non-stick cooking spray.  Break half loaf of French 
bread into dish.  Using a spoon, drop cream cheese over bread.  Top with 
other half of French bread pieces.

Combine eggs, half and half, butter and syrup in a large bowl.  Pour egg 
mixture evenly over the bread and cheese.  Cover with plastic wrap and press 
down.  Refrigerate for 2-24 hours.  Bake at 325 F for 50 minutes.  Allow to 
sit 10 minutes prior to cutting and serving.

Top with delicious Apple Cinnamon Syrup.

Apple Cinnamon Syrup

1/2 cup sugar
4 teaspoons cornstarch
1 teaspoon ground cinnamon
1 cup apple juice
1 tablespoon lemon juice
2 tablespoons butter

Combine sugar, cornstarch and cinnamon in a saucepan.  Stir in apple juice 
and lemon juice.  Cook and stir until mixture thickens  and is bubbly.  Cook 
for 2 more minutes.  Remove from heat and stir in butter.  Makes about 1 1/3 
cups.  I always double this syrup, because it's WONDERFUL!
