I got this recipe from our CES coordinator and thought you guys might be
le to use it as well.  I haven't personally made it yet so I can't give
u any tips - I am going to make it for our Wednesday lesson so I will let
u know how it goes

ut the following into a pot together and bring to a boil:
 cup lentils.. rinsed
 cups water
 ½ tsp salt
fter boiling reduce the heat, partially cover and simmer for 15 minutes.
hile the lentils are simmering:
ice 2 LARGE yellow onions and sauté it in 6 tbls of olive oil for 15
nutes – they should be dark brown in color.
fter the lentils have simmered for 15 minute add ¼ cup rice and simmer
rtially covered for 15 minutes more.  Add the sautéed onion and oil
xture and simmer UNCOVERED for 25 minutes.
his can be served hot, warm or cold and is best if made the day before so
e flavors can marry together.
Serve with a diced tomato and sour cream if desired.
his makes 6-8 servings and is plenty for a seminary class taste in little
xie cups!
