I got this recipe from our CES coordinator and thought you guys might be
able to use it as well. I haven't personally made it yet so I can't give
you any tips - I am going to make it for our Wednesday lesson so I will let
you know how it goes
Esau's Mess of Pottage

Put the following into a pot together and bring to a boil:
1 cup lentils.. rinsed
6 cups water
1 ½ tsp salt
After boiling reduce the heat, partially cover and simmer for 15 minutes.
While the lentils are simmering:
Dice 2 LARGE yellow onions and sauté it in 6 tbls of olive oil for 15
minutes – they should be dark brown in color.
After the lentils have simmered for 15 minute add ¼ cup rice and simmer
partially covered for 15 minutes more. Add the sautéed onion and oil
mixture and simmer UNCOVERED for 25 minutes.
This can be served hot, warm or cold and is best if made the day before so
the flavors can marry together.
Serve with a diced tomato and sour cream if desired.
This makes 6-8 servings and is plenty for a seminary class taste in little
Dixie cups!
