[Teachldsseminary] OT: Shepherd's feast

In reply to the Shepherd's breakfast idea - I have used a recipe that
originally was called something like the shepherds meal or shepherds pot, or
something like that. Years ago my seminary class changed the name to "that
awesome seminary breakfast casserole" they loved it; I think it is good...
anyway, here is the recipe:

1 small onion chopped, 1 1/2 lbs frozen hash brown potatoes, 1 lb bacon, cut
into small pieces and cooked somewhat crisp; (I also add 1 lb mild sausage
and cook it as well); 7-8 large eggs; 2-3 cups sharp cheddar cheese; 2 cans
cream of potato soup; lots of salt and pepper

Fry bacon and sausage til done; set aside. In the drippings, cook hash
browns until almost done; add onions and continue cooking until browns are
slightly crispy ( I sometimes have to add a bit  more Crisco). Mix cooked
meat, hash browns and all other ingredients in a large bowl.  Spray well a
9X13 pan. Scoop mixture in pan and bake 350 for 30 minutes or til done. I
would fix the night before and cook it in the morning. By the time class was
done, the casserole would be finished and the kids would dig in. Milk goes
great with it...
