Recipe:
EZRA TAFT BENSON'S LEMON MERINGUE PIE
lemon rind from 2 lemons
3C sugar plus 2-3 T
2 heaping T flour
2 heaping T cornstarch
5 eggs, separated
juice of 2 lemons
4C water
1 (9") baked pie crust

Grate outside Stir in egg yolks, then water and lemon juice. On medium heat, 
stir constantly until mixture is thickened. Pour into piecrust. Make 
meringue with stiffly beaten egg whites and 2-3T sugar. Bake 425-450degrees 
3-5 minutes, or until lightly browned.
