With one student, you can do so many interesting things!  You two could take
a day and do a special service project now and then--so many sections talk
about service, you could tie it into the scriptures you have been studying.
And, I'd have that One do some of the teaching.  You never learn material as
well as when you have to teach it to someone else, so once in a while give
her some lesson time to prepare a lesson that she teaches to you.  Do you
have missionaries in your ward?  They could come and be an audience if she
is teaching a "missionary" lesson, then give her some real feedback on how
they use that principle in the world.  And boy, I'd bet you could come up
with a "field trip" idea for that one student--is there anything historical
near where you live that you two could go visit?  Much easier with fewer
people.
