Here's some ideas I've done:
When you have an activity it's a good time to change seating. I've done it
by birthday chronology in a year, grades in school, height, colors people
wear, number the chairs etc. You can also have something similar to a march
madness question pick, where they pick a trivia question and if answer
question correctly they can sit where they are or if they don't they change
places with someone who __________.
These are all more spontaneous and so I can change as I see a need and the
kids are unaware of my reasoning!

I decided not to have a seating chart this year... and
already see problems. The new to the ward student
sitting next to the "I'm so shy I don't talk to
anyone" student.... the sleepy student who just needs
a moment or two to wake up next to the "what's wrong
with you poke poke poke " student.... You get the
picture.
So without having a static seating chart... I wondered
if anyone had creative methods for determining seating
that will vary week to week?
